    Short Crust Pastry

    Ingredients

    • Plain flour - 175g
    • Butter (cubed & cold) - 90g
    • Egg - 1
    • Salt & Pepper to taste

    Instructions

    • Combine flour, butter, mustard seeds, salt & pepper in processor and pulse for 10 secs
    • Add egg and pulse until it starts to combine
    • Remove from processor, bring together and refrigerate 30 mins
    • Remove from fridge, wait 5 mins and roll to required thickness

    Optional Ingredients

    • Yellow Mustard Seeds - 1 tsp
    • Dried pumpkin - 2 tbsp (add 1 tbsp water with egg if used)

    • Plain flour - 300g
    • Bread flour - 60g
    • Lard (or Ghee/Clarified butter) - 160g
    • Water - 100ml
    • Salt & Pepper to taste

    Instructions

    • Combine plain and bread flour, salt & pepper in bowl
    • Put lard and water in saucepan and heat until melted together
    • Pour lard/water into flour bowl and combine with a wooden spoon
    • Roll into a ball and allow to rest for 20 minutes

    • Grapefruit - 1
    • Sugar - 280 g

    Instructions

    • Cut citrus fruits in half and remove fruit with a spoon
    • Cook the rinds in 250 ml water for 30 minutes
    • Remove rinds from pan with slotted spoon and drain & cool
    • Add 250 g brown sugar and another 250 g water to pan and bring to boil
    • Cook the rinds in water/sugar for 30 minutes
    • Remove rinds from pan with slotted spoon and allow to cool
    • Cut rinds into strips
    • Dry in air dryer for 4 hours at 60°C
    • Toss in remaining sugar
    • Store in refrigerator

    • Milk - 1050 ml
    • Cornflour - 3 tbsp
    • Cheddar cheese (grated) - 150g
    • Chilli powder - ½ tsp
    • White pepper - ¼ tsp

    Instructions

    • Place cheese rinds in sieve, add 1000 ml milk to saucepan and put sieve in saucepan on a trivet, covering rinds
    • Cook on low heat (4/9) for 30 minutes
    • Remove sieve and trivet and use a potato masher to squeeze out cheese liquid into pan
    • Combine cornflour with a 50ml milk, ensuring no lumps, then add to pan
    • Bring to a gentle boil and add cheddar, chilli and pepper
    • Simmer for 5 minutes
